An easy slow cooker dinner recipe made with just a few ingredients!
This easy chicken recipe has become so popular at my house, we make it almost every week! The best part about it is that you can easily make it ahead of time. Just dump everything into your crockpot and forget about it until dinner time. It’s also incredibly delicious and versatile!
Serve this creamy shredded chicken on a salad, in a burrito bowl, in warm tortillas, or even as a yummy addition to nachos.
Ingredients
- 2 pounds boneless skinless chicken breast
- 1 (8oz) block cream cheese
- 1 (16oz) jar Pace Chunky Salsa
- 1-2 tablespoons taco seasoning
- tortillas for serving
You can use any jar of salsa that you’d prefer, although I’ve never tried it with fresh salsa. We like chunky jarred salsa because it has a great consistency for this recipe. You could also try a few jars of diced tomatoes and chillies or make up your own tomato mixture and seasonings. It’s never a bad idea to use what you’ve already got stocked in the pantry!
Once cooked, the chicken breasts basically just fall apart to make creamy and flavorful shredded chicken. Enjoy with your favorite taco toppings such as avocado, lettuce, cilantro, beans, peppers, etc. This chicken honesty doesn’t need sour cream or additional cheese because it’s already as creamy as it gets! Your picky eaters are sure to get a belly full.
Creamy Salsa Shredded Chicken Tacos
Ingredients
- 2 pounds boneless skinless chicken breasts (3-4 breasts)
- 1 (8oz) block cream cheese
- 1 (16oz) jar Pace chunky salsa
- 1-2 tbsp taco seasoning
- tortillas (for serving)
Instructions
- Place the chicken breasts, jar of salsa, tacos seasoning, and cream cheese into your slow cooker (after making this several times, I've found it helpful to cut the cream cheese into small pieces to help it melt into the mixture faster).
- Cook on LOW for 3-4 hours or HIGH for approximately 2 hours, or until the chicken is easy to shred.
- Once cooked, shred the chicken with a few forks and allow it to simmer in your crockpot for an additional 15 minutes to absorb all of the other ingredients.
- Serve in warm flour or corn tortillas with your favorite toppings! This chicken is also tasty over a bed of salad, in a burrito bowl, or served with nachos.
Notes
- The ideal amount of taco seasoning is defiantly a personal preference. I find an entire packet of taco seasoning to be a bit too much, but I've had reviewers that prefer more.
- Choose your favorite jar of salsa! You really can't mess the recipe up. In fact, you could also replace the salsa with a few jars of diced tomatoes and chillies.
- This recipe is also popular in my house without the cream cheese. Just the combination of chicken and salsa alone is surprisingly awesome, but I recommend serving it with shredded cheese or sour cream.
