You won’t believe how yummy this simple dinner recipe is! I like to keep the canned chicken from Costco stocked in my pantry for last minute dinners like this. In fact, if you like it as much as I do, check out this List of 10 Canned Chicken Dinner Recipes Your Family Will Love.
Recipe Variations
This easy dinner recipe can be customized in so many ways! Here are a few swaps and additions you can try.
- Replace the canned chicken with tuna!
- Add in the veggies of your choice. Frozen peas and mixed veggies are a nice option because there’s no precooking required, but you could also try broccoli, carrots, mushrooms, or a combination of vegetables depending on the season and your mood.
- Any can of condensed creamy soup can be used including cream of chicken or cream of mushroom. I think Campbell’s has a cheddar cheese soup that would also pair well.
- The potato chips add an awesome salty crunch but crushed crackers, bread crumbs, or French fried onions are also popular casserole toppings.
- Egg noodles are rich and dense making them stand out in creamy sauces, but you could also use regular pasta if you’d like. I prefer to use what I have on hand! No need to spend money if you have ingredients you can use at home.
Cheesy Potato Chip Chicken Noodle Casserole
Ingredients
- 2 cups egg noodles (uncooked)
- 1 can cream of chicken soup
- ½ cup milk
- 1 (12.5oz) can of chicken (drained)
- 1 cup frozen peas
- 1+ cups shredded cheddar cheese
- 2 cups potato chips (crushed)
- salt & pepper to taste
Instructions
- Cook and drain two cups of egg noodles according to the package instructions.
- While the noodles are cooking, preheat your oven to 400° F and grease a 9x13 baking dish.
- In a large bowl, whisk together the can of soup and milk. Next, stir in the cooked noodles, drained can of chicken, frozen peas, and the seasoning of your choice such as salt, black pepper, onion powder, or garlic powder (go easy on the salt as some of the ingredients already have a lot of salt).
- Place the mixture into your prepared dish and evenly top with shredded cheese and crushed potato chips. Measure with your heart! I just sprinkle everything on until it looks extra yummy.
- Bake uncovered for 25-30 minutes or until heated through.
Notes
- If you like things extra cheesy, try mixing in some shredded cheese to the noodle mixture before placing it in the casserole dish.
- You can also use canned tuna in place of the chicken.
- Cream of mushroom soup is also a good condensed soup option. Pick your favorite!
- French fried onions and crushed Ritz crackers are also popular casserole toppings you can try.
- Frozen mixed veggies, thawed frozen broccoli, or thawed frozen green beans are also popular veggies to mix into casseroles.
