Fortunately, this food hack makes the perfect amount of pancakes to feed two hungry kids, and the best part, breakfast is ready in less than 10 minutes!
The Martha White brand of muffin mix makes the perfect amount of dry muffin mix for this recipe, however, there are a few other brands out there. You may need to use slightly less or more milk depending on the muffin mix that you choose.
How To Make Pancakes With Muffin Mix
Ingredients
- 1 (7.4oz) bag muffin mix (any flavor)
- 1 egg
- ⅔ cup milk (start with a little less and add more if needed)
Instructions
- Preheat a large skillet on medium-low.
- In a medium size bowl, combine the dry muffin mix, egg, and milk with a whisk. Start with slightly less than ⅔ cup milk and add more if needed to reach your ideal pancake batter consistency.
- Grease your skillet with cooking spray, oil, or butter and then place about 2 tablespoons of batter onto your preheated skillet for each pancake. Cook each one for about 2 minutes on each side or until golden brown and cooked through.
- Enjoy warm with butter, syrup, and anything else you'd like such as fresh fruit or whipped cream!
Notes
- This recipe makes about 10 really small pancakes, just enough to feed two people (depending on your appetite). A few hungry kids can easily gobble them up! If you're feeding the entire family, grab a few bags of muffin mix and double the recipe. It's fun to make a variety of flavors!
- You could also add some mix-ins to your batter before cooking such as chocolate chips, nuts, fresh blueberries, etc.
