A quick and healthy weeknight meal you’ll want to make over and over again!
At some point over the last few years, cabbage has become my favorite vegetable. Not only is it super versatile, it’s cheap to buy and so easy to make in a variety of ways. This Cheesy Cabbage & Ground Beef Skillet is basically an easier way of making cabbage rolls! No stuffing, no wrapping, just cook everything up in one pot and let all of the flavors absorb into the chopped cabbage.
Ingredients Needed
- 1 head of cabbage
- 1 pound ground beef
- 1 bell pepper (diced)
- 1 yellow onion (diced)
- 1 (14oz) can diced tomatoes
- 2 tsp Tony Chachere’s creole seasoning
- 2 tsp garlic powder
- 2 tsp smoked paprika
- 1 tsp black pepper
- 2 cups shredded cheddar cheese
Step 1Chop the cabbage into bite size pieces keeping in mind that it does shrink quite a bit once cooked. I cut mine into strips and always avoid the core.
Step 2In a large skillet that has a lid (big enough to eventually hold all of the cabbage), brown the beef over medium heat and remove some of the excess fat if your beef has a high fat content. Add the diced bell peppers and onions; continue cooking for an additional 3-4 minutes.
Step 3Add the chopped cabbage, can of tomatoes, and all of the seasoning to the pan. Mix well and cover with your lid. Cook for about 20 minutes on low heat, stirring occasionally.
Step 4Turn the burner off and sprinkle the shredded cheese all over the top and place the lid back on for a minute or two, or until the cheese is melted.
Recipe Tips & Variations
- Tony Chachere’s is a popular creole seasoning but any creole seasoning can be used. Keep in mind that some of them are spicier or saltier than others. You could always start with less seasoning and add more at the end after doing a taste test.
- If you have a hungry family to feed, you can make this recipe go further by mixing it with cooked white or brown rice.
- Not everyone likes onion, so that is a totally optional ingredient. I personally don’t like cutting onions but have discovered that some of my local grocery stores sell diced onions and bell peppers in the produce section. A great time saver!
- Any shredded cheese can be used for this recipe, or you could even leave it out all together to make it dairy free. My family loves cheese so much, I put it on everything! 🙂
One Pot Cheesy Cabbage Roll Skillet
Ingredients
- 1 pound ground beef
- 1 bell pepper (diced)
- 1 small yellow onion (diced)
- 1 medium head of cabbage (chopped & cored)
- 1 (14oz) can diced tomatoes
- 2 tsp creole seasoning (we use Tony Chachere's) *see notes
- 2 tsp garlic powder
- 2 tsp smoked paprika
- 1 tsp black pepper
- 2 cups shredded cheddar cheese
Instructions
- In a large skillet (with a lid) that will eventually hold all of the ingredients, brown the ground beef over medium heat. I prefer to leave some of the grease, but if your beef has a high fat content remove any unwanted excess.
- Add the diced bell pepper and onion to the pan and continue cooking for 3-4 minutes.
- Stir in the chopped cabbage, can of tomatoes, and all of the seasoning. Place the lid on and cook on LOW heat for 20-25 minutes, stirring occasionally.
- Once the cabbage is cooked to your liking, turn the burner off and evenly sprinkle the cheese over top. Place the lid back on for 1-2 minutes, or until the cheese is melted.
Notes
- *You can use any creole seasoning for this recipe just keep in mind that some of them are extra spicy and some are on the salty side. About 2 tsp of Tony Chachere's is perfect for this recipe, but use less of any other brand and then do a taste test before adding more.Â
- Want to make the meal go further for your hungry family? Mix in some cooked white or brown rice.
- You can buy pre-diced bell peppers and onions in the produce department of some grocery stores. A big time saver on busy weeknights!
