- 1 (7.4oz) bag muffin mix (any flavor)
- 1 egg
- ⅔ cup milk (start with a little less and add more if needed)
Preheat a large skillet on medium-low.
In a medium size bowl, combine the dry muffin mix, egg, and milk with a whisk. Start with slightly less than ⅔ cup milk and add more if needed to reach your ideal pancake batter consistency.
Grease your skillet with cooking spray, oil, or butter and then place about 2 tablespoons of batter onto your preheated skillet for each pancake. Cook each one for about 2 minutes on each side or until golden brown and cooked through.
